Quick and easy beef stroganoff

Description

Beef Stroganoff is a dish of Russian origin popular all over the world.  It consists of sautéed pieces of beef in a sauce made with sour cream and is usually served with rice.

 

This recipe is a quick and easy way of preparing this classic Russian dish.

450g Rump or Sirloin Steak trimmed of all the fat


1 large onion thinly sliced


250g mushrooms, sliced


284ml soured cream or double cream


1 Large tbsp of quality Mustard (Dijon recommended)

 

Long grain rice (enough to serve 2)

 

Methods/steps

1) Cook enough rice for 2 people according to instructions on pack, typically rice should take no longer to cook by simmering for 15 minutes

 

2) Add 1 tbsp of mustard to cream or soured cream in a bowl an mix together thoroughly

 

3) Add salt and pepper according to taste to the mixture

 

4) Add a splash of white wine or more according to taste

 

5) Add beef to a very hot pan, frying beef in a little vegetable oil (or olive oil) and butter

 

6)  When beef has browned, wrap in foil and SET ASIDE

 

7) Add onions and mushrooms to pan used to cook the beef and cook onions until soft and mushrooms have cooked through, adding more oil if necessary

 

8) Add beef to pan when mushrooms have cooked through and onions have softened

 

9) Add soured cream sauce to pan and cook on a medium heat until sauce thickens

 

10) Serve on a bed of rice
