French chicken and bean casserole

Description

This is a variation of a french dish, all in one pot. Very easy if you have a busy day. Serves 2-3 people.

  • 5 or 6 chicken thighs or drum sticks.
  • 1 X tin of chopped tomatoes
  • 1 X tin of giant butter beans
  • 1 x sweet red pepper- sliced
  • 1 x large onion- roughly chopped
  • 6-8 whole mushrooms
  • 2 cloves of garlic crushed
  • 1 cup of white wine
  • 2 teaspoons of oregano
  • 7floz chicken stock
  • olive oil
  • salt/papper to taste
  • 2 dessert spoons of flour to thicken
Methods/steps
  1. Heat the oven to 160/375 or gas 3.
  2. In a large pan, fry the chicken pieces in some olive oil on a high heat for a minute or two until just browned and then put to one side.
  3. Using the same pan, on a low heat some more olive oil, sautee the onion and mushrooms and sweet peppers until soft. Then add the oregano and the garlic.
  4. Heat up a large hot pot or casserole dish on the stove and put the chicken, onion, mushrooms, oregano, garlic and peppers into it.
  5. Sprinkle 2-3 spoons of flour into the pot and stir in thoroughly. (this will thicken the sauce)
  6. Then add the wine and stir then add the chicken stock.
  7. Once the juices start to thicken add the tomatoes and stir again.
  8. Add salt and pepper to taste (at this point a little tomato ketchup sweetens the taste my 'secret ingredient')
  9. Cover the dish and put in the oven for 50mins.
  10. Take out and then stir in the beans. and cook for a further 20 mins.
  11. If you find the sauce a little too runny you can add some chicken granuals or *corn flour ( *needs to be mixed with cold water first) until the juice thickens more. If it is too thick then thin out with a little more wine.
  12. Serve from the pot with some green vegetables.
